This is a South African delicacy. Like jerky, it is a dried meat, but it is salt cured and air dried. It
is a true raw product since no heat was used. It is preserved in salt, vinegar, spices and a little
sugar, then hung up and dried. The dehydrator is set with no heat and air is blown to make sure
no mold forms. It takes on average 3-4 days to dry and then gets sliced thin. Please keep
refrigerated since we live in humid Florida.
