Locally sourced fresh pecans are fermented in a 2% brine with an airlock for about 3 days. It is
then dehydrated no higher than 95 deg F, to make sure that the heat does not kill the microbial
diversity developed in the fermentation process. This takes about 3 days to make sure the final
product is crispy and not waterlogged. The process of fermentation makes this a very digestible
probiotic food.
