When cream is frozen the fat becomes globulated (tiny balls of fat). In
order to get the cream to a more "creamy" consistency you need to
rigorously stir it after it has been defrosted.

Our cream is raw, thick and delicious.  It takes between 2-3 gallons

of milk to make 1 quart of cream.  No wonder it's expensive!
