When cream is frozen the fat becomes globulated (tiny balls of fat). In order to get the cream to a more "creamy" consistency you need to rigorously stir or blend it after it has been defrosted. Frozen cream is great to use in smoothies, to add to cooked dishes such as mashed potatoes, scrambled eggs, soups, etc. We also make ice cream with it and also whip it for whipped cream. Ice Cream made with frozen cream has a slight grainy texture due to the fat globulating but it still tastes great! Frozen cream also makes great butter!
