Making your own lard is pretty easy on the stove or in your crockpot! It comes from our forest-raised, Non-GMO fed pigs. Lard is a healthy saturated fat when it comes from forest-raised pigs such as our own, because the fat contains the natural fat-soluble Vitamins A and D that the pig has access to through fresh forage and sunshine. Saturated fats like Lard and Tallow are more stable and better for cooking or frying with, they are less likely to contain harmful free-radicals as compared with poly-unsaturated processed Vegetable Oils.
How to make Lard from Pork Fat:
Place fat into dutch oven. Add a quarter inch of water to your pot (to keep from burning fat initially), and heat on a very low setting, stirring every 30 minutes to minimize sticking. The lard melts out separating from the cracklings (you are not cooking the fat, keep it below 170 degrees). Filter the still-hot lard through a cheese-cloth over a colander, into a metal or glass container. Allow to cool first before putting in plastic. If using glass jars then also allow to cool to room temp before freezing to avoid breaking glass.
