These country style ribs are a popular cut of pork that are not technically ribs, but rather thick, meaty strips cut from the pork shoulder or the blade end of the loin near the shoulder blade. They are known for their rich, robust flavor and tender, juicy texture when cooked properly, often resembling the taste and consistency of traditional ribs. This cut is typically fattier and meatier than baby back or spare ribs, making it a cost-effective and versatile option for various cooking methods.
This pork comes from our own pigs who were moved to a new area every week in our "Piggy Woods" where they root up the ground for tubers, eat grass and weeds, acorns, wild blackberries, and anything else they desire. They were supplemented with a ration of Organic, Non-GMO feed, skim milk and scraps from our butchershop.
