These pigs were moved to a new area every week in our "Piggy Woods" where they root up the ground for tubers, eat grass and weeds, acorns, wild blackberries, and anything else they desire. They were supplemented with Organic, Non-GMO feed from Heritage Organics.
Pork Loin is one of the best cuts of the pig. It can be cooked as a roast or it can be cooked and then sliced into loin steaks or even into pulled pork.
Maple Baked Pork Loin Roast: A simple and delicious recipe.
Ingredients: 1Tbs Lard or bacon fat, 1 pork loin roast (4lb), salt and pepper to taste, flour (optional), 3/4 C maple syrup, 3/4 C ketchup, 1/3 cup water, 1 Tbsp minced garlic
Directions: 1. Preheat oven to 350 degrees 2. Heat the bacon fat in a large skillet over medium high-heat until hot. Meanwhile, season the pork roast with salt and pepper, then dredge in the optional flour. Sear in hot fat until browned on all sides. 3. Place onto a large sheet of aluminum foil set on top of a baking sheet; set aside. Stir together the maple syrup, ketchup, water and garlic. Pour 3/4 of the sauce over the pork. Fold the foil over the pork and seal to form a packet. 4. Bake in preheated oven until the internal temp. reaches 165 degrees, about 2 hours. Carefully open up the foil packet and broil for a few minutes until the sauce glazes the meat. Serve with remaining sauce.
