(1-2 lb. avg, 3/4 inch thick) The smoked ham slices are from our forest fed pigs supplemented with Non-GMO verified feed. They are a great compliment to the table for any meal, especially for breakfast. The hams are cured old Virginia style: hams are packed with salt and left to cure for 10 days then smoked in the smoke house. We do not inject brine solutions into our hams and we do not use nitrites or nitrates in the smoking process, neither “natural”(celery powder) nor synthetic (sodium nitrite).
These pigs were moved to a new area every week in our wooded 60 acres where they root up the ground for tubers, eat grass and weeds, acorns, wild blackberries, and anything else they desire. They were supplemented with Non-GMO pig feed, 100% grass fed skim milk and/or whey, and meat scraps from our butchershop.
