Pork Loin Roast
Pork Loin Roast with sweet potatoes, apples and onions.

Directions

2 1/2 of pork roast with salt & pepper

2-4 apples, quartered

2 sweet potatoes, cut into wedges

1 sweet onion, sliced

1/2 a tsp of sweet paprika

1/4 tsp of cumin

1/4 tsp of chili powder

salt and pepper to taste

butter, coconut oil or bacon fat

Instructions:

Preheat oven to 500 degrees, rub the pork with salt and pepper then place on a tray and cook for 15 minutes, flipping halfway through cooking time to get nice color on the meat. Meanwhile, chop the apples, sweet potatoes and onions. Then toss in the oil and spices and arrange it on the tray around the pork roast. Turn the oven down to 450 degrees and roast for 20-30 minutes until the apples and sweet potatoes are tender and the meat reaches 120 degrees. This is a preference, most might say to cook to 140 degrees but that is how you get dry pork. Allow the meat to rest 10 minutes before slicing and it will continue to cook and be juicy! Return sliced pork and juices to the pan and serve the sliced pork with sweet potatoes, apples, onions, and a simple salad.
