A quart of our frozen cream is only $18 if you buy in increments of 5 quarts! When cream is frozen the fat becomes globulated (tiny balls of fat). In order to get the cream to a more "creamy" consistency you need to rigorously stir it after it has been defrosted. The best way to do that, I have found, is to remove the defrosted cream to a bowl to allow for more area to "really stir" with a wooden spoon. Frozen cream is great to use in smoothies, to add to cooked dishes such as mashed potatoes, scrambled eggs, soups, etc. We also make ice cream with it and also whip it for whipped cream. Ice Cream made with frozen cream has a slight grainy texture due to the fat globulating but it still tastes great!
And, if you would like to make your own butter this would be the best deal, as cream that has been frozen makes great butter!
