Have You Wondered Why Our Beef is Packaged Differently? 1/27/17

Hello SMALL Farm Enthusiasts,

We have ruffled some feathers with different packaging on our beef
products so we feel an explanation is in order. After the butcher we
used for many years here, went out of business 2 years ago, we finally
settled on using L and W Deer Processing in Madison for our precious
beef. The challenge lies in the fact that they process deer as a
specialty and we need to go elsewhere during the months of October to
January, when hunting season begins and ends.  Thus, we go where we
would rather not go, but have to because we cannot get in at L and W and
thus the different packaging. Our future goal is to have our own
slaughter facility right here on the farm or very nearby.  We have been
doing a lot of research on that in the last year or two but we would
also need $$ to get even a minimalistic set up going. Any donations or
low interest loans are something we could talk about. So just to be
clear, the beef in the new packaging is the very same "Jimmy"  beef, the “other” burger on our site that is cheaper is from other producers that we know and trust and less money.

Now I want to tell you a bit more of our ongoing beef story here. We do
not have the land base here to do beef anymore as our dairy has grown so
much that we also will need $$ for land if we are to stay here many
more years and continue to expand the dairy. I have had some serious
thoughts about what in the world will happen if we continue to expand
the way we are.  It will not be many years till we will need to size up
in land base here. So, we have been looking for good partners to produce
beef to our specs. With Jimmy we
thought we had a winner but then Jimmy moved back to Texas to be closer
to his family and while we applaud him for doing what was best for his
family we REALLY hated to see him go. Jimmy
literally is one of the top 5 cattlemen in the world today, if not the
very best, he is right up there and has rubbed shoulders with, and
learned from, and taught with, ALL the top guys. To say the least, I was
ecstatic to be able to get his beef to sell. We were just plain lucky
to get it, and then he moved. Then to top it off, the ranch where he was
working, the manager who flew his own small plane for 30 years (they
had a run way right on the farm) took himself and his instructor down in
a crash that killed them both.  At this point, it is likely that we
will continue to get beef from this farm but without Jimmy running the
day to day operation and the manager no longer there as well, it is
unlikely that the same kind of care and attention will be given to
raising their grass fed beef. It might be good enough for us and the
best we can get, but not the same. Jimmy will be missed but will likely
come to FL every few months to guide the ship, so to speak.  Bottom
line: we feel like we work too hard to get you all the very best beef
and pork and then have it slaughtered by someone else who does not care
like we do…………we feel like we NEED our own slaughter facility.   

So there are 2 things we feel like we need at this time. More land and
our own slaughter facility.  If anyone is interested in either of these
investment opportunities, we would be happy to talk.

Trial Date: October 21st, Please Come And Show Your Support

They sent an undercover investigator to our farm to buy our food and caught us red handed. We are charged with a second degree misdemeanor just like a druggy. Yes it is a very sick world we live in when the farmer and his wife who neither have ANY previous record are accused of a crime and the crime is something that people have been doing since the beginning of time.
