We're Full Of Bologna 8/11/17

Hello SMALL Farm Enthusiasts,
Bologna is back, the good stuff without all the preservatives and other yucky
stuff they put in processed meat. The only ingredients are: 100%
grass fed beef, Rapadura sugar, water, Redmond Salt, Black Pepper,
Cloves, Coriander, Mace. Let me tell you the story of how it all
began. When I was growing up in PA we always had Lebanon sweet bologna
on hand. It was a fast food for our family. One little problem, it had
15 lbs of white refined sugar per hundred lbs of meat and lots o
nitrates, YUCK! So when I quit vegetarianism and wanted real food I
sometimes found myself jonesing for bologna but new it was YUCK. So one
day an idea popped into my head and I called the butcher in PA and ask
if they could exchange the white refined sugar for Organic unrefined
SUCANAT or Rapadura. They said no because they did not want another
recipe out there of some off brand made by them. After 22 years of the
same thing they did not want to change. I told them that the whole cow
would be made into bologna and sent to Florida. Ok, we can do that. We
did a lot of tweaking of the recipe but the last 15 years it has been 3
to 5 lbs of organic unrefined sugar (usually SUCANAT) and celtic sea
salt plus the other ingredients, it is smoked and YUMMY! We eat a LOT
of it and we sell it like crazy. It is an amazing healthy product, 100%
grass fed beef that is transformed into a nice fast food. We eat it with kraut, mustard, Honey Mustard Kimchee
and other things. It is good fried. We roast it over an open fire
outside instead of yucky hot dogs. Many of the butchers in PA now offer
there own take on it as a "healthier" version. It is literally selling
like hot cakes. We are proud of the trend we have started. People are
getting educated about the evils of white refined sugar and nitrate
preservatives and realizing that if you start with high quality meats in
the first place you do not need added flavor enhancers. Our flavor
profile is clean tasting and wild with the smoky flavor mixing with the
deep grass fed beefy flavor. We have not had any in stock for a while as
we have not been able to get any from the Amish in PA as it sells out
quickly. So, when the chance came, we had several 100% grass fed cows
processed into our special recipe bologna. We now have 4lb logs or large sticks of it or presliced in one lb packs,
and vacuum sealed very nicely. This is a thaw and eat product, no
cooking required which makes it great lunch or road food. We take
several packs frozen and pack it in a cooler and head out for the day
and by lunch time it is nicely thawed and ready to eat. Try it. We also
have several new cheese flavors you might try with this. Our cheese is raw and made from Beyond
Organic milk from 100% grass fed cows of which 90% are A-2. You cannot
get these foods in stores, only live, living food brings your body life.
These foods are road foods or fast foods, no need to support Monsatan
just because your traveling somewhere. These are nutrient dense foods
that feed your body at the cellular level not leave them hungry and
starving for necessary nutrients.
We have a new beef partner doing some awesome beef. If interested in

Stay cool, no need for you to get to warmed up as your farmer is doing
that for you. Ha Ha. We have been working on the new land and it has
been some sweaty days out there but is now coming together. We are still
in the first stages of coming together and have a long way to go but at
least step one is close to completion. We have cut the fence lines out
of the forest and are very close to getting cows out there, hopefully in
the next few days. Super excited to get this first milestone completed
as it was some awesome work and brainpower usage and is now looking very
good. Next is where to put in a barn or shelter/shed and then power and
then a milking station in the next year. Progress for sure and always
growing here, happy customers are telling friends I guess, and that is
all good.
