Oh boy is it fun on the farm in the summer! It seems as though we run as fast as we can and then do our best to keep up. We are extremely grateful for good, young folks who want to come out and learn farming and after several years of this we have begun to establish some guidelines, making it work better for all involved. Most farmers love what they do and want to be close to the land and animals but lack in the area of management, preferring to work alone. I will admit, I have fallen into this category myself but it seems like my calling has expanded beyond myself so whether I like it or not I am managing a team. For me this is becoming more and more enjoyable although the growing family plus a working team is sometimes a daunting task. And knowing what your team can handle is key at times so this brings me to my point. We used to have 2 categories of beef, “Jimmy Beef” and then all our other beef that was not marked as “Jimmy”. This proved to be an organizing nightmare for our walk in and realized that we really did not need 2 categories. So, if you have been wondering where the “Jimmy Beef” has gone it is still here we have just eliminated that category from our website. For the immediate future our steaks and other tender cuts will, for the most part, only be from Jimmy (https://www.facebook.com/Regengraze/). Hamburger will largely be his as well, as we have other wholesale outlets for ours. Another adjustment we will make is all bundles will be 5 of something. We only have a few items that we will need to change on this score but wanted to let you know why. The answer is: efficiency.

Our yogurt is heated but our kefir is raw. Kefir is more tart than yogurt and for this reason yogurt is preferred by some for its milder flavor. We use both here at our house in many creative ways i.e. a little in salad dressing or when making guacamole etc. and yes both have good friendly bacteria for your gut health and it is good to get a variety of these, so go for it.
Kefir:

Far superior, the “champagne” of cultured milk
More strains of beneficial bacteria and yeast, 50 or more.
1% lactose or less
Colonizes good bacteria
Lasts indefinitely*
Has yeasts: Gives it fizz and controls pathogens in the gut.

Less than 2 grams of carbs in ½ cup.

*Kefir has a slightly mucous forming quality that makes it work for us. The mucous has a clean quality to it that coats the lining of the digestive tract, creating a sort of nest where beneficial bacteria can settle and colonize

Yogurt:

The “wine” of cultured milk
7-10 strains of beneficial bacteria
8.5 grams lactose, 6.8 grams for Greek yogurt
Feeds the good bacteria already present in the colon
Lasts 24 hours
No yeasts
2 grams carbs in ½ cup (whole milk has 5.7 carbs per ½ cup)

4 weeks ago I promised more info on the health of milk produced the way it was 100 years ago, the 2 links below are enough on this subject. If you are new to our milk please read it/them. Milk produced this way may cost an arm and a leg and a first born child but it may be worth it compared to the empty calories you get from cows not eating fresh green grass as 100% of the diet!

Trial Date: October 21st, Please Come And Show Your Support

Hello Small Farm Enthusiasts, Our trial date is set for October 21st at the Suwannee County Courthouse in Live Oak, FL. We would like to ask you to drop everything and come to the trial. They sent an undercover investigator to our farm to buy our food and caught us red handed. We are charged with a second degree misdemeanor just like a druggy. Yes it is a very sick world we live in when the farmer and his wife who neither have ANY previous record are accused of a crime and the crime is something that people have been doing since the beginning of time.
