Please note: You may occasionally find spots of mold on this cheese. Don't worry! The mold is a blue or green mold which is harmless and is the same strain of mold that grows on blue cheese. Our producers are experimenting on different ways to prevent that from happening. When you find a spot of mold you can cut it out and eat it!
The ingredients are simple. Hundred percent grass fed raw milk, culture, rennet and salt. The cheese has a brushed rind which means as the cheese is aged in the cave the molds are brushed off periodically which results in a mild, golden, nutty flavored rind.
